What is Solomillo?

Solomillo, or pork tenderloin, is the most tender muscle in the pig. This long, narrow cut sits on the inside of the back, just above the kidneys, and is barely used by the animal. That’s why it contains very little connective tissue and remains exceptionally soft. It’s no surprise that tenderloin has long been considered one of the most prized parts of the pig. What sets the Iberico variant apart is its beautiful marbling of fat. Unlike regular pork tenderloin, this fat melts during cooking and infuses the meat with extra juiciness and a complex, full flavour you won’t soon forget.

Cerdo Ibérico: natural luxury from Spain

The Iberico Solomillo at The Butchery comes from the Cerdo Ibérico, one of the most flavourful free-range breeds in the world. These pigs live in southern Spain, where they roam freely and feed on a natural diet of grasses, wild herbs, roots and olives. During the dry summer months, they are supplemented with grains when needed, but the highlight of their diet begins in autumn. That’s when acorns from cork and holm oaks fall to the ground, and the pigs feast on them in large quantities. These bellotas give the meat its distinctive taste and provide a uniquely high concentration of healthy fats. The combination of movement, natural feed and pure breeding results in a product that’s unmatched in both flavour and texture.

Ibérico Solomillo moet je vooral in haar waarde laten met niet teveel opsmuk! Het vlees is kruidig en supersmaakvol van zichzelf, dus wat peper en zout is voldoende. Even bakken in boter of grillen in de pan en klaar ben je. Het vlees is mooi dooraderd, dus lekker sappig van zichzelf. In de oven doet een solomillo het trouwens ook heel goed!
